Sooji (Suji) Halwa, also known as rava sheera or rava kesari, is a classic Indian treat made with sugar, semolina, and ghee. Our Suji Halwa recipe with milk makes for a creamy and decadent halwa that melts in your mouth. This nostalgic dessert will keep you coming back for more.

1) In a non-stick pan over medium heat, add 1 cup of fine suji / semolina.
2) Stirring constantly and thoroughly, roast the sooji in the pan for about 10-15 minutes until it is golden brown.
PRO TIP: Keep stirring, if you stop it might burn!
3) Transfer the toasted sooji to a small bowl and set aside.
4) In a medium saucepan, add 1 cup sugar, 2 cups water, 1 cup milk, 1/2 tsp cardamom powder, and 1 pinch of saffron.
5) Slowly bring to a boil over medium heat, stirring constantly.
PRO TIP: If you like colorful Halwa, add a few drops of food coloring & mix well!
6) Once the syrup mixture boils, remove it from the heat and set aside.
7) In a large non-stick pan, add 1/2 cup ghee and bring to temperature over medium heat.
8) Add 2 tbsp chopped almonds, 2 tbsp chopped pistachios, and 2 tbsp of chopped cashews. Saute for about 1 minute.
9) Add 2 tbsp golden raisins and stir (about 10 seconds).
10) Add 1 cup roasted Suji. Mix and saute for about 2 minutes.
11) Slowly add the sugar syup to the suji while mixing.
12) Cook for 5-7 minutes while stirring.
13) Transfer Halwa to a serving bowl.
14) Garnish with sliced almonds, pistachios, and grated coconut! Serve warm.
