Spicy Aloo Dal Wale Sabzi

Ingredients:

1 LB Cup - Potatoes (Chopped into big chunks)
1 Qty Large - Onion (Finely Chopped)
3 Qty. Tomato (Blended into a paste)
7 Qty. Green Chilies
2 Tbsp Coriander
1 LB Chana Dal
2 Tbsp Ginger Garlic Paste
½ Tsp Turmeric Powder
2 Tsp Coriander Powder
2 Tsp Red Chili Powder
1 Tsp Kasuri Methi
1 Tsp Paprika Powder (Optional)
1 Tsp. Salt
2 Tsp Cumin Seeds
1 Cup Ghee / Oil

Instructions:

1) Soak chana dal for 30 minutes and then half boil it.

2) In a wok/pan, add ghee/oil, and bring it up to medium heat.

3) Add in onions, and cook until golden.

4) Add in ginger garlic paste and cook for 1 minute.

5) Add in cumin seeds and cook for 1 minute.

6) Add in the tomato paste, mix well and cook until almost all of the water has evaporated.

7) Add in red chili powder, coriander powder, turmeric powder, salt, and paprika powder, and mix well.

8) Turn the heat to medium-low, and cook until the gravy is fragrant. Add water if the gravy seems too thick. Mix well in between.

9) Add in potatoes, and cook for 5-7 minutes.

10) Add in chana dal, mix well and cook for 2-3 minutes.

11) Add in green chilies and coriander. Mix well.

12) Add 1 or 1 ½ cup of water, turn the heat to low, cover the lid, and wait 10-12 minutes for the potatoes and chana dal to fully cook and become soft.

13) Add in Kasuri methi, cumin seeds, green chilies, and coriander. Cover the lid and cook for 5 minutes.

14) Dish it out and Serve it up!
