Coconut Pistachio Stuffed Dates – Ramadan Iftar Dates Recipe

Ingredients:

Medjool Dates - 10-12 qty.
Desiccated Coconut - 1/3 cup
Pistachios - 1/3 cup (chopped) plus more for garnish
Almond/Nut Butter - 2 Tbsp
Honey - 1 Tbsp
Cardamom Powder - 1/4 tsp
Rose Water - 1/2 tsp
White Chocolate - 1/2 cup
Semi-sweet Chocolate - 1/2 cup
Coconut Oil - 2 tsp
Rose Petal (dried) - garnish

Instructions:

1) Start by removing the pits from the dates. To do this, cut a slit down the middle on one side, open up the date and remove the pit inside. Once all the dates have been pitted, set them aside on a piece of parchment paper.

2) To make the filling, roughly chop 1/3 cup of pistachio and add them to a mixing bowl.

3) Next, add 1/3 cup of desiccated coconut, 2 Tbsp. almond butter, 1 Tbsp. honey, 1/4 tsp cardamom powder, 1/2 tsp rose water.

PRO TIP: Don't want to use almond butter? Feel free to substitute any nut butter you prefer!

4) To fill the dates, take 1 tsp of filling and pack it into the middle of the date. Set the dates aside and start on the toppings.

5) In 2 separate microwave safe bowls add 1/2 cup of white chocolate and 1/2 cup of semi sweet chocolate into each bowl. Add 1 tsp of coconut oil to each bowl and microwave in 30 second intervals until chocolate is fully melted.

6) Drizzle each date with the white chocolate and semi-sweet chocolate and garnish with chopped pistachios and rose petals.

7) Refrigerate for 30 minutes or until the chocolate has hardened.

8) Enjoy at Iftar. Ramadan Mubarak!
