Chicken Korma

Ingredients:

8 cloves
2 cinnamon sticks
8 green cardamoms
1 cup fried onions
¼ tsp nutmeg
¼ tsp mace
1 cup oil
1 whole chicken (legs and breast pieces)
Salt as needed
2 tbsp ginger and garlic paste
1 tsp red chilli powder
1 tbsp coriander powder 1tbs
½ tsp turmeric
1&½ cups whipped yogurt
1 tbsp kewra water

Instructions:

1) Take cloves, cinnamon sticks, green cardamom and grind together and set aside.

2) In a separate grinder, add fried onions,nutmeg, mace and grind again. Set this mixture aside.

3) In a heated oil wok, add chicken, salt and ginger garlic paste and cook on high flame until brown. This will take about 15 minutes.

4) Once the chicken is brown, add red chili powder, coriander powder, turmeric powder and grinded spice mixture and stir well. Let this cook on low heat for about 10 minutes.

5) Add the whipped yogurt on high flame and let it come to a boil. Cover the wok and set it to medium heat until the oil comes to the surface and the chicken is fully cooked.

6) Add the kewra and cook on low heat for about 2 minutes.

7) Chicken Korma is ready to serve.
