Baingan Ka Bharta

Ingredients:

4 tablespoon oil
1 teaspoon cumin seeds
8 dry red chili peppers
1 green pepper (chopped)
2 teaspoons ginger and garlic paste
3 large Baingan (sliced with skin and soak in water)
Salt as needed
1 and ½ cups of water
2 tablespoon of tamarind pulp
1 teaspoon coriander powder
1 teaspoon red chili powder
1/2 teaspoon garam masala
¼ teaspoon turmeric powder
Few curry leaves
1 piece of coal
Cilantro for garnishing

Instructions:

1) In a heated wok, add 4 tablespoon oil, cumin seeds and dry chili peppers and saute for about 1 minute.

2) Add chopped green peppers and ginger garlic paste and let it saute for about 1 minute.

3) Add the Baingan and salt and stir well.

4) Add water and close the lid and cook on low flame for about 15 mins.

5) While the baingan are cooking, soak tamarind in warm water for about 10 minutes.

6) Once the baingan has cooked, add the tamarind pulp and stir well.

7) Add coriander powder, red chili powder, garam masala, turmeric powder, curry leaves and saute for about 5 minutes.

8) Take a piece of coal and place it on the stove top. Turn the stove on and leave the coal on the flame for a few minutes. Place a piece of aluminum foil in the middle and add the hot coal on top. Pour a spoon of cooking oil over the coal and cover the pan immediately. Let this sit for a couple minutes. Open the lid and remove the coal with the foil.

9) Add the baingan bharta to a serving dish and garnish with cilantro.
